Ingredients
3 medium to large ripe bananas110 g (4 oz) margarine or butter
225 g (8 oz) caster sugar
2 eggs
285 g (10 oz) plain flour
5 ml (1 tsp) salt
5 ml (1 tsp) vanilla essence
60 ml ( 2 1/2 fl oz) soured cream
50 g - 100g (2-4 oz) walnuts , chopped
Directions
1. Grease and base line a 1kg ( 2lb) loaf tin .2. Mash the bananas.
3. Cream toghether the margarine and sugar until pale and fluffy. Beat in the eggs.
4. Sift together the flour , bicarbonate of soda and salt , and stir in.
5. Add vanilla essence , soured cream and walnuts. Mix throughly. Spoon mixture evenly into the loaf tin.
6. Cook at a temperature of 160 degrees Celcius for 60 minutes.
