Ingredients
3 courgettes1 medium to large aubergine
Salt
1 onion, chopped
1 red pepper, seeded and sliced
1 green pepper , seeded and sliced
1-2 cloves garlic , crushed
Oil for frying
110 (4oz) mushrooms, sliced
8 tomatoes , skinned , seeded and chopped
5ml (1 tsp) marjoram
Salt and freshly ground
black pepper
Directions
1. Slice the courgettes and chop the aubergines into size pieces. Place in a colander , sprinkle with salt. Let stand 1/2 hour. Rinse and dry thoroughthly.2. Saoute onion , peppers and crushed garlic in a littler oil.
3. Mix all the vegetables togheter and season with marjoram , salt and black pepper.
4. Turn into a lidded ovenproof casserole and cook at a temperature of 180 degrees Celcius for 60 minutes.
